Every week, TV5MONDE shares ideas for weekend cooking with its fans and followers across our social media channels. In response to popular demand, we shared a recipe on making the Poulet de Bresse au Comté the last time. This time we've got another household dish, the Gratin Dauphinois, which originated from the historic Dauphiné region in south-east France.
 
This is a super easy and yummy dish, making use of classic ingredients in French cuisine such as cheese, cream and potatoes. Various versions to this dish exist, including using sweet potatoes or a mix of many different spices to replace the chives and pepper used in our version.
 
So, let's get started! 

Gratin Dauphinois (potato slices baked in cream and cheese)

 
Prep time: 10 minutes
Cook time: 35 minutes
Level of difficulty: easy breezy 
 

The essential ingredient: we suggest gold Yukon or russet potatoes

What you'll need:
  • 6~8 potatoes, peeled and sliced into 1/8 inch slices
  • 3 cups (24 oz) Heavy cream
  • 1~2 cloves garlic, peeled, minced
  • A pinch of salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup (4 oz) grated cheese
  • (Optional) 1/2 cup (4 oz) Crème fraîche
     

Another classic ingredient. Camembert is also frequently used for this particular dish

 
The how-to:
  • Preheat oven to 375 degrees F.
  • Prepare the baking dish by rubbing butter over the surface. 
  • Peel and slice the potatoes. Lay the slices on a clean tea towel and pat dry. 
  • Bring 2 cups of the heavy cream to a simmer in a medium saucepan. Toss in the potatoes, salt and pepper, cream and minced garlic. Cook for 3~5 minutes (this depends on the size of the potatoes and thickness of the slices).
  • Rub the cut side of the garlic clove on the bottom and sides of a casserole or baking dish. 
  • Pour in the potatoes and cream mixture. Top it with the remaining cream and generously layer it with cheese. You may add chives over the top, or put it on after if you prefer a fresher taste.
  • Bake until the potatoes are tender and the cheese is golden brown. This should take about 30 minutes for most conventional ovens.
  • When it’s ready, remove from the oven and let it sit aside for at least 8 to 10 minutes prior to serving.
     

Onions, shallots, thyme and chives are also popular choices for spices used in the dish

 
Get creative with this dish! Different households tend to have their very own recipes, and below are some of our suggestions!
  • Choose your cheese! Gruyere, parmesan, swiss or emmental are all popular choices. 
  • Add a pinch of nutmeg if you are a fan of the spice
  • Go for the organic option for the potatoes, cream and cheese
  • Skip the pepper and sprinkle on chives or shallot instead
  • Add (or reduce!) the amount of garlic or salt used if you’re not a fan. 
  • Similarly, add or reduce the amount of cheese as you so desire
  • Arrange your potato slices as shown in the top photo for a more elegant presentation
  • Substitute the cream, cheese and other dairy products for vegan options, if available.
     

 
Remember to let the dish cool down before serving!
